We accomplished a lot in last night’s Winemaking BootCamp Class. We started out the night crushing our Lanza Musto Vineyards Sangiovese. We broke the batch into 2 230 gallon tubs of must. The first tub we pitched a BM45 yeast and the second tub we pitched a D254 yeast. The battle of the yeasts is on! 🙂 Then we moved the bins in the cooler for a cold soak. I can’t wait to see the differences the yeasts make. Next class we will press off the must. Stay tuned….
