FriYay! with Some New Mexican Sparkling

It’s Friday and we missed Wine Wednesday, so we opened some bubbles. And what awesome bubbles they were!
Sauvage by Gruet Winery did not disappoint! I picked it up at Quincy Gypsy Kitchen Wine & Food Shop. The owner knows how much I love interesting new wines and suggested it for me. It’s made in New Mexico! How cool?! Also, my buddy Chappy from Cru Podcast enjoyed some not too long ago so I knew I needed to share this with my winemaking friends.
The wine had a pleasant nose with soft apple notes, toasted white bread, and yeasty undertones. The palate was very well balanced. The acidity was not overly crisp, but the wine was not overly creamy either. A wonderful balance in my opinion. The bubbles dance on your tongue as you enjoy this delicious and tantalizing wine.
