The Pinotage has arrived!! The berries taste very sweet with good seed and pulp development. We got Brix readings of 23-24.5, .48 TA, and 3.86pH We will need to do a few adjustments but the berries look great and we are looking forward to the crush! I am still deciding which yeast to use
